Don’t Shoot Mezcal. We beg you.

January 1, 2026

Rustic mezcal tasting setup at twilight with clay copitas, orange slices, and worm salt on a wooden table.

We’re certainly not here to tell you how to live your life.
But if you’re slamming mezcal like it’s bottom shelf tequila at a college bar, we need to talk.

Mezcal isn’t made to be shot.
Especially not IBÁ.

It’s not a race.
It’s not a dare.
It’s a moment.

You’re holding something that took years to make, from a plant that probably outlived your last three relationships. The agave grew in the sun, soaked in the soil, survived the seasons, and was crafted with obsessive care.

And you want to toss that back in two seconds?

Nah. You don’t wanna do that.

You don’t need a sommelier-level ritual.
But if you want to actually taste what mezcal has to offer, you do need to slow down. Just a little.

hOW TO SIP MEZCAL (SO YOU CAN ACTUALLY APPRECIATE IT)

1. Pour it neat.

Into a veladora, a copita, or even a solid wine glass if that’s what you’ve got. Wide mouth. No ice. No mixers. No drama.

Take a second. Appreciate the pour.
Let it breathe for three to five seconds. Not because it’s science. Because it’s respect.
This isn’t just a spirit. It’s a story in liquid form.

2. Smell… carefully.

Don’t jam your nose in there. Mezcal isn’t wine and it will fight back.

Hover just above the rim. Mouth slightly open. Breathe in gently.
Smoke. Earth. Fruit. Fire. Something wild you can’t quite place. That’s what you’re looking for.

3. Coat your palate.

Take a small first sip and roll it around your mouth. Think of it like stretching before a run.

You’re waking things up… your tastebuds, your brain, your entire approach to drinking spirits.

4. Now sip. Slowly. Thoughtfully.

Let it linger. Let it evolve.
Feel how it moves. What it reveals.
This is what separates mezcal from the rest of the shelf. Layers. Personality. Soul.

5. Exhale.

After you swallow, breathe out gently through your nose.
You’ll catch the finish… maybe sweet, maybe earthy, maybe smoky.
Definitely unforgettable.

6. Add a slice of orange, if you’re feeling it.

Not lime. Lime fights with mezcal.
Orange is for balance. Roundness. Compliments, not confrontations.

Bonus points for a little sal de gusano.

7. Don’t shoot it. Ever.

Seriously.
It took years to make this pour. You can give it a minute.

Raise your glass. Clink with friends.
Then sip like you mean it.

Keep in mind…
Fast is forgettable.
Slow is smooth.
Smooth is IBÁ.
