IBÁ ORANGE ZEST SOUR

Ingredients
- 2 oz IBÁ Mezcal
- 1 oz Fresh Orange Juice
- 0.5 oz Lemon Juice
- 0.5 oz Simple Syrup
- Egg White (from one large egg)
- Freshly Orange Zest (for garnish)
Method
- Dry shake (shake without ice) the IBÁ Mezcal, orange juice, lemon juice, simple syrup, and egg white to emulsify.
- Add ice and shake again vigorously.
- Strain into a rocks glass.
