How to Drink Mezcal (Like a Pro)

Let’s get something out of the way immediately.

Drinking mezcal “like a pro” has very little to do with memorizing rules.

You do not need to sit in silence analyzing smoke density while pretending to identify obscure tasting notes from a hillside you’ve never visited.

And despite what some people may imply, there is no mezcal certification exam waiting for you at the end of the night.

Great mezcal is meant to be experienced.
Not performed.

That said, there are a few things that completely change the experience once you know them.

And once you notice the difference, it’s hard to go back.

THE GLASS ACTUALLY MATTERS

Not because mezcal needs to feel fancy.

Because aroma is a huge part of flavor.

A proper copita, veladora, or even a whisky glass allows mezcal to open up gradually instead of flattening everything immediately.

That means:
more texture,
more aroma,
more complexity,
more expression.

Could you drink it from a coffee mug?

Absolutely.

Will we judge you?

Only a little.

SHOULD YOU DRINK MEZCAL COLD?

Traditionalists may immediately say no.

And technically, colder temperatures do mute some aroma and complexity.

But here’s the thing:

Drink mezcal the way you genuinely enjoy drinking mezcal.

Some people love IBÁ Cítricos straight from the freezer because it creates an entirely different experience:
cleaner,
brighter,
almost crystalline.

Others prefer mezcal at room temperature where the layers evolve more dramatically over time.

Neither experience is wrong.

They’re simply different.

That’s the point.

Respect the spirit.
Don’t police the experience.

SMELL IT BEFORE YOU SIP IT

Most people smell mezcal incorrectly.

They go directly into the glass like they’re testing industrial chemicals.

Bad strategy.

Instead, bring the glass slightly below your nose and take a softer breath with your mouth slightly open.

That helps the alcohol settle and allows the actual aromas to appear.

Smoke.
Cooked agave.
Earth.
Minerality.
Fruit.
Herbs.
Citrus.
Warm spice.

Sometimes all at once.

Great mezcal resists simple explanations.
That’s part of the fun.

NOW, A SIP

If you really want to understand mezcal, start by sipping it slowly.

Great mezcal evolves while you drink it.

The aroma changes.
The texture opens.
The finish lingers.
New flavors appear seconds later.

That entire experience disappears when mezcal is thrown back too quickly.

Now…
once in a blue moon?
Sure. Life happens.

But great mezcal is worth slowing down for.

Especially a layered mezcal like IBÁ.

The longer you sit with it, the more it reveals.

LET IT MOVE ACROSS YOUR PALATE

Don’t immediately swallow.

Let the mezcal sit for a second.

Move it gently across your tongue.

Pay attention to texture as much as flavor.

Is it sharp?
Round?
Creamy?
Dry?
Mineral driven?
Bright?

This is where balance matters.

A well made mezcal doesn’t just hit hard.
It unfolds.

That gradual evolution is part of what makes IBÁ feel so different.

PAY ATTENTION TO THE FINISH

The finish tells you a lot.

Does the flavor disappear instantly?

Does the smoke become harsh?

Does the alcohol suddenly spike aggressively?

Or does everything continue opening slowly?

Great mezcal lingers.

Not in a heavy exhausting way.

In a layered, evolving, textured way.

That long integrated finish is one of the things people notice immediately when tasting IBÁ for the first time.

Usually right before they look up and say:

“Wait… what is this?”

NEAT OR COCKTAILS?

Yes.

Both.

Despite what some mezcal purists may suggest, cocktails are absolutely a valid way to experience mezcal.

Great cocktails simply create a different kind of mezcal experience.

Some highlight citrus.
Others emphasize smoke.
Others pull forward texture, herbs, fruit, spice, or minerality.

Some people love spirit-forward cocktails.
Others prefer brighter, sweeter, or more refreshing builds.

That’s the beauty of mezcal.
It adapts.

IBÁ was intentionally created to work beautifully both neat and in cocktails.

Some nights call for a slow neat pour.

Others call for a cocktail that somehow turns one drink into three.

Life moves around.
So should mezcal.

THE BIGGEST SECRET?

Slow down.

That’s really it.

The best mezcal experiences happen when people become a little more present.

A little less rushed.

The agave took years to grow.
The process took time.
The flavors reveal themselves gradually.

Great mezcal opens up for people willing to slow down.

Not expertise.

MAYBE THAT’S THE WHOLE POINT

Drinking mezcal “like a pro” is not about showing off knowledge.

It’s about noticing more.

The aroma before the sip.
The texture on the palate.
The evolution of flavor.
The atmosphere around the moment itself.

That’s where the experience lives.

IBÁ was created specifically for that kind of mezcal experience:
layered,
balanced,
expressive,
social,
alive.

So pour a little.

Slow down.

And enjoy it however genuinely feels right to you.
